Fictional authors who place their character(s) in Islamic countries and mentioning their way of ruling....

The question came up by a new author about writing a military thriller/adventure and it involves naming an Islamic country and the mention of sharia in a fictional manner of course.  The storyline is about an Arab princess who converts to another religion like the LDS church, which is totally against Islam/Muslim ways and a hit team is now out to kill her in the U.S.  I thought that may be offensive to their religion and beliefs. I want to avoid any legal problems. I suggested that maybe we should create a fictitious country.  Please let me know what your knowledge of this would be or give me suggestions.  Thank you, everyone.  God bless.
