TOMATO SOUP:
MELT 2 Tbs. butter or margarine
BLEND IN
· 3 Tbs. flour
· 2 Tsp. sugar
· Dash of garlic, onion, basil, oregano
Remove from heat.
Gradually STIR IN:
· 2 cups tomato juice
Bring to a boil, stirring constantly. Boil 1 minute.
ADD 2 cups of cold milk.
Heat almost to boiling, then add doodles:
DOODLES:
· 2 eggs, beaten
· 2 Tbs. water
· 1 cup flour to make a thick batter
· Salt to taste (optional—I don’t use salt, and we don’t miss it)
Drop by teaspoonfuls into hot, bubbling soup, coating spoon with hot soup each time. Turn off heat and cover until serving time.
Serve with grilled cheese sandwiches.
